Apple Spice Spelt Muffins

Apple Spice Spelt Muffins

Make a batch on the weekend and have them on-hand all week long! These babies also freeze well, and will keep in the fridge for up to a week. Try them toasted with nut butter!

Ingredients

Yield – 12 Muffins

1 cup spelt flour (or gluten free flour mix)

1/2 cup oats (quick cooking works best)

3/4 tsp baking powder

Pinch of salt

3/4 tsp ground cinnamon

1/8 tsp ground nutmeg

1/2 cup apple sauce

1 flax egg (1 tbsp ground flax mixed with 3 tbsp water until gelatinous)

1/4 cup coconut oil, melted

1/3 cup cup hazelnut butter (or any nut butter)

1/2 cup maple syrup

1 cup shredded apple

Handful walnuts or crushed hazelnuts

Method

  • Combine dry ingredients together in a bowl.

  • In a separate bowl, combine all wet ingredients together.

  • Mix the dry ingredients into the wet ingredients and fold to combine, but do not overmix!

  • Divide batter between muffin trays.

  • Bake approx. 35 minutes or until knife comes out clean.
